Coconut Milk Powder: What is it? 

The coconut fruit is elongated or spherical in shape and weighs approximately 2 pounds on average.  It has an outer thin hard skin (exocarp), followed by a thicker layer of fibrous mesocarp (husk), the hard endocarp (shell), the white endosperm (kernel), and a large cavity filled with a clear liquid (water). Coconut milk powder comes from the white endosperm often referred to as the meat of the coconut.  The meat is grated or shredded and then pressed to produce coconut cream. The coconut cream is then spray dried using heat. The end result of pressing the meat and spray drying the cream is a high fat, low-moisture powder.  Coconut milk can also be produced from coconut milk powder by standardizing with water to reduce the overall fat content. What are some key attributes of Coconut Milk Powder? 

iTi’s Coconut Milk Powder products have a higher fat percentage and lower moisture content than coconut cream, making these products shelf-stable. The fatty acid profile of coconut milk powder consists of monounsaturated fatty acids including oleic acid and medium-chain fatty acids including lauric acid, capric acid, and caprylic acid. Coconut milk powder is naturally cholesterol-free and low in sugar and carbs.  

iTi Tropicals offers two different coconut milk powder products; 2960 Coconut Milk Powder, Instant, and 2970 Coconut Milk Powder, 100% Coconut. iTi Tropicals’ coconut milk powder originates from Indonesia and is mildly sweet, free from off-flavors, and has a bold coconut taste and smell.  

The mouthfeel of coconut milk powder is creamy and slightly oily due to the high-fat content. Coconut milk powder is a great substitute for dairy ingredients such as dried milk solids because it has a mild flavor and enhances flavor when combined with other ingredients. 

 What’s the difference between products 2960 and 2970? 

2960 is an instant coconut milk powder that contains sodium caseinate as a carrier for coconut fat.  Because of this, it is not a dairy-free product. 2970 is also a coconut milk powder that is made from 100% coconut.  It is dairy-free and Kosher DE. 

 Is coconut milk powder soluble? 

Our 2960 Instant Coconut Milk Powder is soluble because it contains sodium caseinate. Our 2970 100% Coconut, Coconut Milk Powder is not 100% soluble. Insoluble coconut fiber is used as a carrier for the fat, leaving some particles present. 

 What applications does coconut milk powder work best in? 

2960 Instant Coconut Milk Powder can be used in almost any application, including beverages, etc. due to its solubility. Because 2970 Coconut Milk Powder isn’t 100% soluble, it works best in applications that have textures or inclusions such as smoothies, nutrition bars, bisques, sauces, and breading.
