Recipe: Pineapple Passion Fruit Mai Tai

Ingredients

Water

White Rum, 80 Proof

5250 Frozen Passion Fruit Concentrate

Triple Sec, 40 Proof

8800 Aseptic Pineapple Juice Concentrate, 61 Brix

Grenadine

Gold Rum, 80 Proof

Directions

1. Measure all ingredients. Fill a hurricane glass with ice and set aside.

2. In a mixing glass, combine Water, white rum, 5250 Passion Fruit Concentrate, triple sec, 8800 Pineapple Juice Concentrate, and gold rum.  Place a metal speed shaker on top of the mixing glass, making sure that the metal speed shaker is not at an angle.

3. Give the top a light tap and pick up the entire unit (metal speed shaker and mixing glass). Flip it over to make sure that the metal glass is facing towards the ground.  With a quick, even movement, shake vigorously for 15 seconds.

4. Twist off the metal speed shaker and strain the liquid through the spring strainer into the hurricane glass with ice. Garnish with a maraschino cherry, a pineapple slice, and a sipping straw.
