Recipe: Passion Fruit Sorbet

Passion fruit’s popularity has been increasing substantially over the past few years with no end in sight.  With a bold, tropical, distinguishable taste, it’s the perfect ingredient to incorporate into frozen novelties. Passion fruit’s flavor profile contributes acidity and tanginess, which compliments sweeter ingredients such as banana, coconut, and mango. Passion fruit imparts a pleasant aroma and color to finished products, making them all the more appetizing to your consumers!  With origins from Ecuador and Peru, this fruit is both exotic and tropical.

Warmer weather is right around the corner, so  the iTi Innovation Team has created a recipe for a fresh and sweet Passion Fruit  Sorbet to showcase passion fruit’s bold, unique flavor.

5000 Frozen Passion Fruit Juice

1000 Aseptic Banana Puree, Acidified, Seedless

Total


Directions

1.     Combine all ingredients into a small pot.

2.     Heat the mixture on high heat and bring to a boil. Once boiling, reduce the heat to a simmer and heat for 5 minutes.

3.     Transfer mixture to an ice cream maker and freeze one hour.

Optional ingredient- For a fun, exciting texture, incorporate dark chocolate chips into the mixture prior to freezing!
