Recipe: Passion Fruit Salsa and Margarita

Its our final week of Passion Fruit February at iTi Tropicals! Since this is our last week, we have two delicious recipes to share; Passion Fruit & Mango Salsa with a Passion Fruit Margarita! We took a traditional pico de gallo and replaced the lime juice with Passion Fruit Juice and added a little bit of sweetness with Mango Puree. We paired our salsa with a Passion Fruit Margarita rimmed with a chili-lime salt!

Passion Fruit & Mango Salsa

Directions 

  1. Rinse all produce.  Scoop out the seeds from the tomatoes and peppers. Dice into 1/4″ cubes. 
  1.  Peel the onions and dice into 1/4″ cubes. Mince the cilantro.  
  1. Combine the peppers, onions, tomatoes, cilantro, 5100 Passion Fruit Juice, and spices into a bowl.  Mix to combine all ingredients.  Set aside for 20 minutes to marinate the vegetables. 
  1. After 20 minutes, stir again and serve.  

 

Passion Fruit Margarita with a chili-lime salt rim 

Ingredients

Directions 

  1. Rim the margarita glass with salt by taking a lime wedge and running it around the rim of the glass to moisten it.  Roll the outside of the glass in a mixture of chili powder and salt. 
  1.  The mixture of the chili powder and salt should be a 1:2 ratio of chili powder to salt. 
  1.  In a mixing glass, add ice or water (1 ounce) until it is 1/3 of the way full.  
  1. Add tequila, triple sec, 5000 Passion Fruit Juice, and 3006 Passion Fruit Syrup.  
  1. Place a metal speed shaker on top of the mixing glass, making sure that the metal speed shaker is not at an angle.  
  1. Give the top a light tap and pick up the entire unit (metal speed shaker and mixing glass).  Flip it over to make sure that the metal glass is facing towards the ground.   
  1. With a quick, even movement, shake vigorously for 15 seconds.   
  1. Twist off the metal speed shaker and strain the liquid through the spring strainer into the champagne coupe that has been prepared.
