iTi Tropicals, Inc. is pleased to announce the availability of seven custom coconut water prototype blends. The prototypes include Sweetened Coconut Water, two Coconut Water Vegetable Blends, Coconut Water Acerola Blend, and Coconut Water Apple Passionfruit Blend, as well as Coconut Water Cranberry Blend and Coconut Water Grape Blend.
The coconut beverages highlight powerful ingredients for use in products including juice, tea, coffee, and soda, to mention a few. The coconut milk beverages can contribute mouthfeel, electrolytes and label-appeal to such foods as ice cream, yogurt, soup, dressings, and sauces. These shelf-stable prototypes are packaged under HACCP- and cGMPs at the Tetra Pak pilot facility located in Denton, Texas.
Being largely neutral in flavor and color, coconut water blends well with tropical, non-tropical and vegetable juices alike. The fourteen blends are designed to highlight how coconut water and coconut milk enhance consumer health and label appeal of other juices and vegetables.

This sweet and refreshing blend comes from a mix of coconut water from concentrate, apple concentrate, and passionfruit concentrate. To be palatable and to increase the brix/acid ratio, we added apple concentrate. Sourced from Peru, passionfruit essence is blended with coconut water, yielding a high-quality, delicious result.
Like the Coconut Water Apple Passionfruit Blend, to be palatable and to increase the brix/acid ratio, this blend requires the addition of cane sugar. The combination of the cane sugar, acerola puree high in vitamin C and sourced from Petrolina, Brazil, citric acid, and coconut water from concentrate, the Coconut Water Acerola Blend is both nutritious and delicious.
The high acidity of cranberry juice needs to be sweetened to be palatable for most consumers. That is just what we did. This blend effectively uses a combination of apple juice concentrate and coconut water concentrate to complete a 100 percent juice product that has less acidity and fewer calories for those looking to have a refreshing and healthy drink.
Using coconut water to reduce the relative high caloric content of grape juice, the resulting prototype product provides the taste and impact of traditional Concord grape juice, but with only 80 calories per 8-ounce serving.
The Coconut Water Green Vegetable Blend stands out in terms of ingredients. Including water, alphonso mango puree, spinach concentrate, blueberry concentrate, apple concentrate, citric acid, and dried barley grass, this blend is high in nutritious value and in satisfaction. The main ingredient, the alphonso mango puree, often grows in India where it is carefully tended before being processed into a creamy and flavorful puree that invites the consumer to indulge.
The Coconut Water Red Vegetable Blend is unique for its red color from vegetables. With water, coconut water from concentrate, apple from concentrate, red beet from concentrate, carrot from concentrate and passionfruit from concentrate, this blend combines great taste and nutrition in a special ‘chuggable’ thirst-quenching beverage that is great with ice and even vodka! The recipe is 100% juice and has less than 75-calories per 8-ounce serving.
Many popular coconut water brands are sweetened with the addition of 1 percent fruit sugars. This featured prototype coconut water is sweetened with the addition of de-ionized apple concentrate, showing how coconut water concentrate can be used to make a delicious retail beverage.
