Recipe: Passion Fruit Mousse

February is Passion Fruit month at iTi Tropicals.  This month, iTi’s innovation team is excited to share four unique recipes ranging from desserts to sauces.  iTi is kicking off Passion Fruit February with a delicious, decadent mousse topped with a tart gelatin.  Check out the recipe below to learn how to prepare this delicious mousse. 

 Passion Fruit Mousse 

Ingredients 

Percentage 

iTi 2200 Coconut Cream 

59.16% 

iTi 5000 Passion Fruit Juice 

38.33% 

Sugar 

2.43% 

Salt 

0.08% 

Directions 

  1. Measure all ingredients. 
  2. Using a stand mixer, whip 2200 coconut cream, and sugar on low speed for two minutes.  After two minutes, gradually increase the speed of the mixer every 30 seconds until high speed is reached. 
  3. Continue to whip on high speed until stiff peaks form, about ten minutes.   
  4. Add the Passion Fruit Juice to the coconut cream and whip for an additional three minutes. 
  5. Pour the finished mousse into 6 oz individual serving glasses. 
  6. Refrigerate for 3 hours.  After 3 hours, prepare the Passion Fruit Gelatin Topping 

 

Passion Fruit Gelatin Topping 

Ingredients 

Percentage 

iTi 5000 Passion Fruit Juice 

60.75% 

Agar Agar 

2.48% 

Water 

36.76% 

 

Directions 

  1. Measure all ingredients.  In a small pan, heat the water to a minimum of 165 degrees.  
  2. Add the Agar Agar to the water and mix well.  Allow to bloom for 2 minutes. 
  3. Add 5000 Passion Fruit Juice to the mixture and mix well. 
  4. Pour the gelatin onto the prepared mousse. 
  5. Refrigerate for an additional two hours.
